Cornflake Fried Chicken

Restrictions are back in place – and you can no longer go out and grab food after 10pm *cries internally*

BUT… *drumroll*… with my super easy and super quick fried chicken recipe, next time you’ve got the munchies – you can be enjoying some delicious fried chicken in the comfort of your home in no time!

The Cornflake batter gives it a nice crunch, and the sauce is so good you’ll want to make lots to have with other dishes too! (those of you who have tried my dynamite chicken/shrimp recipe will recognise the sauce recipe – it’s pretty similar!)

Ingredients

For the Chicken

  • 300 g Chicken cut into strips
  • ½ Tsp Salt
  • ½ Tsp Pepper
  • 1 Tsp Soy Sauce
  • 1 Tsp Paprika Powder
  • 1 Tsp Garlic Powder
  • ½ Tsp Onion Powder
  • ½ Tsp Cayenne Powder
  • 1 Tsp Honey

For the Sauce

  • 2 Tbsp Mayonnaise
  • 1 Tbsp Ketchup
  • 1 Tbsp Sriracha Sauce
  • 1 Tsp Lemon Juice
  • 1 Tsp Honey
  • ½ Tsp Garlic Powder
  • ½ Tsp Paprika Powder

For the Batters

  • 120 g Plain Flour
  • ½ Tsp Salt
  • ½ Tsp Pepper
  • 2 Eggs
  • Bowl of Cornflakes

Instructions

  • Mix together all of the ingredients for the chicken marinate with the chicken strips and leave to marinade in the fridge for 30 mins
  • Prepare the sauce by mixing together all of the ingredients
  • Mix together the plain flour, salt & pepper into a bowl
  • Whisk 2 eggs in a bowl
  • Crush a bowl of Cornflakes into small pieces
  • Dip the chicken strips into the egg, then flour, egg again, and finally coat in crushed cornflakes
  • Fry at low-medium heat until the chicken is fully cooked inside and golden brown in colour, turning the strips every few minutes to ensure they’re cooked evenly throughout
  • Serve with some chips & enjoy!!
